Do not use a cheese cloth. You can dry the cheese, then brush the cheese with a solution of 2 tablespoons of vinegar and 1 tablespoon of baking soda that you find on the table or at your grocer. You can then squeeze the curds on the cloth to remove excess water, making sure to squeeze them well before they dry out. Rinse the cloth off for a few more seconds if needed. Place the cloth in a lint-free place and cover with a towel. Do not use the cloth to clean any other items unless it is absolutely necessary, such as for sterilization of your milk cheese.

What if I am having trouble with the process?
The reason you are having this problem is that while making Saffron Cheese, your kitchen might be full of ingredients, you do not have enough time to process, stir, mix, and process again, which can then cause a loss of flavor and a change in the final product.
If this is happening to you, we recommend waiting 2-4 hours before going to the kitchen. If the cheese is not fully hardened after taking the cheese out of the refrigerator, then refrigerate the cheese and process it again 2-4 hours before serving. Once hardened, it will be easier to slice and serve because the moisture has been released from the curdling, and the cheese pieces will be easier to slice into small squares.
