Saffron is a rich source of vitamin C. So if you’re eating a lot of saffron, your body will convert it to Vitamin C. The high concentration of vitamin C in saffron is one of its strong points. The high-pigment saffron called baccharomyces is also a source of Vitamin C. But saffron is a poor source of vitamin K. As a consequence, if you eat lots of saffron, your vitamin K will be a lot lower. So if I ate large amounts of saffron, I’d be unlikely to be getting Vitamin K even though the nutritional data indicate that I should be. This is not at all what you want for your health and wellbeing.
So what’s the real story?
The answer is: it varies depending on your geographical location. But no matter where you live, saffron could be an excellent all-rounder, providing many vitamins (as well as some anti-oxidants such as vitamin C, calcium and potassium) and a wide range of important micronutrients such as antioxidants. This would not be the case if you consumed an awful lot of saffron.
